Creole White Beans
A quick recipe to pull together with ingredients already in your cabinet. More complicated recipes are available all over the internet, but this is a good starter recipe. These beans taste better the second day.
Ingredients
- 500 grams white beans 1lb / 2 cups; Navy, Great Northern, Cannellini etc.
- 1 onion medium, quartered
- 6 cloves garlic roughly chopped
- 2 bay leaves
- teaspoon thyme
- 6 cups stock chicken or vegetable
- 2 teaspoons creole seasoning make your own or your favourite brand
Instructions

Soak beans overnight in salt water (1 tablespoon / liter). Drain soaking liquid.
Combine all remaining ingredients in a heavy pot and cook until tender, about 60-90 minutes. Check after 45 minutes as fresher beans cook faster.
